Most dyes used in the food industry are synthetic and can be a health hazard. Red tomato may serve as a natural alternative dye to replace synthetic colorants. This study aimed to review the literature on the addition of red tomato products (powder tomato, paste, freeze-dried, tomato peel powder, tomato pomace) to reduce the usage of synthetic dyes in the food industry. Red tomato products have been used as coloring in pasta, bologna, sausages, cookies, crackers, macaroons, hamburgers, breads, muffins, cheeses, and nuggets. The trans-cis isomerization of lycopene by oxidative processes directly affects the color of the pigment. The lycopene contained in tomato has antioxidant activity and could reduce or eliminate other oxidants and/or synthetic preservatives in food. Moreover, tomatoes in foods have high sensory scores, nutritional appeal, and marketing potential. However, its use as a food colorant has been not extensively explored. Therefore, further studies are still required, especially on the stability of carotenoids in tomatoes used in processed foods.
OBJECTIVE: This study aimed to describe the trade and microbiological quality of boiled quail eggs on the waterfront of Salvador , Bahia, Brazil, from the child labor perspective. METHODS: This cross-sectional study administered semi-structured questionnaires to 40 underage vendors and performed the microbiological assessment of 40 quail egg samples as follows: mesophilic aerobic microorganism count, coagulase-positive staphylococcus count, estimation of the most probable number of total and thermotolerant coliforms/Escherichia coli, and testing for Salmonella spp.. The results were compared with the standards provided by the Resolution RDC nº 12/2001, National Sanitary Surveillance Agency. RESULTS: The vendors were mostly female (57.5%) students (95.0%) aged 8 to 17 years. The most common reason for working was supplementation of the family income (57.5%). The mean gross income was R$38.31/day. Most of them presented inadequate personal hygiene but they recognized that foods could cause diseases. Many (47.5%) vendors reported washing their hands up to twice daily. Mean mesophilic aerobic microorganism and coagulase-positive staphylococcus counts were 2.43 and 2.01 log colony-forming unit/g, respectively, and the estimated thermotolerant coliform contamination was 0.98 log most probable number/g. Escherichia coli was found in 15.0% of the samples and none contained Salmonella spp. Most (55.0%) samples were noncompliant with the legislation. CONCLUSION: The results evidenced the presence of minors selling quail eggs on beaches of Salvador and suggest risk to consumers' health because of the detected contamination and vendors' ignorance of principles of hygiene.
ResumoCom o advento da nanotecnologia, houve o desenvolvimento de técnicas envolvendo processamento, fabricação e aplicação de estruturas, com forma e tamanho controlados, sendo que na indústria de alimentos, estas formulações, tanto na faixa micrométrica como nanométrica, vêm sendo utilizadas com o objetivo de favorecer o produto final. Tendo em vista a importância tecnológica dessa técnica e do grande interesse nacional e internacional, principalmente no ramo da indústria alimentícia, sobre os benefícios do encapsulamento, o presente estudo prospectivo teve como objetivo avaliar o panorama mundial relativo ao tema em questão, correlacionando-o com os documentos de patentes depositados. Para tanto, realizou-se uma pesquisa das patentes na base de dados europeia Espacenet®, utilizando os descritores do tema em estudo associados aos códigos de classificação. As informações encontradas foram compiladas em gráficos e discutidas. Pôde-se observar que o maior número de patentes referiu-se ao código A23L1/00 -alimentos ou produtos alimentícios: a sua preparação ou tratamento e houve um crescimento exponencial em relação ao depósito de patentes nos últimos 10 anos, sendo os Estados Unidos o país líder em número de patentes depositadas (60%). A Firmenich e CIE lidera o ranking com mais patentes depositadas. Em relação à área de atuação, predomina a indústria alimentícia (69%). No que diz respeito ao Brasil, o país aparece com apenas 1 patente detentora desta tecnologia, sendo um número bastante reduzido o que mostra a falta de incentivo neste setor. Diante dos resultados obtidos, concluiu-se que, apesar de ser uma tecnologia recente, observase uma tendência ao crescimento de depósito de patentes. AbstractWith the advent of nanotechnology, there was the development of techniques involving processing, manufacture and application of structures, with controlled shape and size, and in the food industry, these formulations (in micrometer and nanometer range), have been used with the objective of promote the final product. Considering the technological importance of this technique and the great national and international interest, especially in the food industry about the benefits of encapsulation, the present prospective study aimed to assess the outlook for the global theme, correlating it documents filed with the patents. So, a survey of the patent in the European database Espacenet ® was carried out, using the descriptors of the topic under study associated with classification codes. The information found in charts were compiled and discussed. After analyzing the graphs, it was observed that the largest number of patents referred to the code A23L1/00 and there was a slight upward trend of patent applications from the last 10 years, and the United States is the leading country in number of patents deposited.
