The article describes the technology for the production of chopped fish products from blue whiting with the use of food additives from secondary fish raw materials. The sociological survey results and analysis of Murmansk city population nutritional structure are presented and the main factors that affect the choice of fortified foods are identified. The basic formulation of chopped fish products with the introduction of biologically active mineral components is developed and its optimization is carried out by computer simulation. To search close to optimal for a mineral composition that, taking into account the high organoleptic and rheological characteristics, a high orthogonal rototable by mathematical modeling method. The results were processed Datafit 9.0 computer program by generally accepted statistical methods. The experimental results of the chemical composition of chopped fish products and their caloric value are presented. As a result of the studies, a technological scheme and recipe for chopped fish products from Northern Basin underutilized raw materials such as blue whiting with the secondary fish raw materials additives was developed. Experimentally was obtained, that the using a cutlet portion with the 15% addition from its net weight exceeds the daily share of calcium intake, which is unacceptable due to the presence of other food products containing it in the consumers daily diet. The previously developed optimization recipe for chopped blue whiting products with the fish bones flour addition based on organoleptic and structural-mechanical indicators obtained by mathematical modeling methods allowed us to establish the optimal ratio of the introduced components.
Introduction. Currently, there are a number of different concepts for reducing occupational injuries. One of the most important mechanisms for reducing the number of potentially dangerous events and injuries at hazardous production facilities is the formation of an industrial safety culture. However, there are currently no studies devoted to the effectiveness of the use of the occupational safety and health management system.Problem Statement. The objective of this study is to analyze the state of industrial safety culture based on occupational injury statistics.Theoretical Part. As the basic information, statistical reports on cases of industrial injuries provided by the Kola Mining and Metallurgical Company Joint Stock Company (JSC Kola MMC), a subsidiary of PJSC «MMC «Norilsk Nickel», were used, on the basis of which an analysis of the state of industrial safety culture was carried out.Conclusions. The results of a detailed analysis of the effectiveness of creating a favorable environment for the formation of industrial safety culture on the example of the concern PJSC «MMC «Norilsk Nickel», which includes the largest mining enterprise in the region, Kola Mining and Metallurgical Company (JSC Kola MMC), indicate the effectiveness of the measures taken.
Introduction. The article discusses the issues of labor protection at mining enterprises. Timely analysis and elaboration of measures to prevent them can reduce the risks of major accidents with a large number of victims.Problem Statement. It is necessary to choose the most effective measures to improve the level of industrial safety at mining enterprises based on a ready-made conceptual model of hazardous phenomena and accidents.Theoretical Part. To solve this problem, the article considers a ready-made conceptual model of hazardous phenomena and accidents that may occur in mines as a result of non-compliance with the requirements of occupational safety and industrial safety of enterprises proposed by A. I. Babenko. The analysis of accidents, risk factors, potential dangerous and harmful production factors at the mining enterprise is carried out. Based on the analysis, the most effective measures to improve the level of industrial safety at mining enterprises are proposed.Conclusions. The article considers the issues regulating labor protection at mining enterprises, as well as it identifies industrial risks and options for their elimination through the organization of measures to ensure industrial safety. Based on the results obtained, the most effective means to reduce the risks of hazardous production situations is the use of multifunctional systems to ensure occupational safety and industrial safety of mining enterprises.
