Overheating is still a major problem in the use of conventional heating for milk and various dairy products, because it leads to the lowering of quality and sensory and nutritional values. Microwave (MW) heating has been credited with providing superior‐quality dairy‐based products with extended shelf‐life, representing a good alternative to conventional heat treatment. The main drawback of MW heating refers to nonuniform temperature distribution, resulting in hot and cold spots mainly in solid and semisolid products; however, MW heating has been shown to be suitable for liquid foods, especially in a continuous fluid system. This review aims to describe the main factors and parameters necessary for the application of MW heating technology for dairy processing, considering the theoretical fundamentals and its effects on quality and safety aspects of milk and dairy products. MW heating has demonstrated great ability for the destruction of pathogenic/spoilage microorganisms and their spores, and also inactivation of enzymes, thereby preserving fresh characteristics of dairy products.
The present study has its aim to evaluate the different dimensions of organic vegetables quality from the Brazilian family-run farm, especially the evaluation of composition, antioxidant activity, microbiological characteristics and pesticide residues. There were evaluated carrot, broccoli, kale and white cabbage grown by organic farmers in the highlander region of Rio de Janeiro state. There were determined humidity, lipids grade, total protein content, mineral residues (ashes), soluble and insoluble fibers, soluble solids, total acidity, pH, and pesticide residues. The antioxidant activity was determined using DPPH (2,2-diphenyl-1-picrylhydrazyl) free radical removal. Among the analyzed vegetables, the effectiveness of the antioxidant capacity was obtained, in decreasing order, by broccoli, kale, white cabbage and carrot. According to the microbiological parameter, evaluated vegetables have shown satisfactory sanitary quality. Pesticide residues were not found above the detection limit for both authorized and unauthorized analyzed crops.

MétodosA elaboração do questionário valeu-se de escala de Likert de cinco pontos. As validações foram realizadas com clientes de duas unidades de alimentação e nutrição, da cidade do Rio de Janeiro, sendo a primeira uma empresa gráfica e a segunda uma empresa de confecções. A validação interna valeu-se do coeficiente de Cronbach para medir confiabilidade. Aplicou-se o teste de normalidade às matrizes de escores para cada item. A constatação do comportamento dos escores não Gausiano indicou utilização da correlação de Spearman (r) para discriminar itens. Como critério de exclusão foi definido r negativo ou próximo de zero. A validação externa foi realizada entre o confronto das matrizes representadas pelas médias dos escores de cada item. Utilizou-se a razão dos desvios-padrão para avaliar a concordância relativa, considerando-se a associação entre as matrizes resultantes da aplicação do questionário nas duas unidades de alimentação e nutrição.
The attitudes of Foodservice users towards soybeans and their derivatives were investigated. A Likert scale questionnaire was created based on the proposal by Behrens & Da Silva. Statistical analyses included position and dispersion measures, frequency distribution, normality test, Spearman's correlation coefficient and Cronbach's alpha (α=0.96). The questionnaire was answered by 89 workers from the steel industry. The results revealed that soybean consumers do not read labels to identify its presence. When asked about soybean's nutritional quality, respondents recognized that it has a high protein quantity and that it is a functional food as a hormonal substitute in menopause and a regulator of intestine functions, but they did not recognize its role in bone tissue formation. Because they were unaware of issues related to genetically modified foods, they did not have a formed opinion. It was concluded that Foodservice users from the steel industry are unaware of critical facts that determine the purchase of soybean and its derivatives.
