В статье приведены данные, характеризующие состав макро-и микронутриентов вторичных ресурсов переработке тыквывыжимок тыквы. Установлено, что выжимки тыквы являются ценным сырьем для производства пищевой добавки, так как в их составе содержатся белки, пищевые волокна, в том числе пектин и протопектин, минеральные вещества, а также такие биологически активные вещества, как витамин С, β-каротин и Р-активные вещества. С применением метода ядерно-магнитной релаксации (ЯМР), показано, что предварительная обработка выжимок тыквы в электромагнитном поле сверхвысоких частот ЭМП СВЧ определенных параметров перед ИК-сушкой позволяет перевести часть связанной влаги, содержащейся в выжимках, в свободную влагу, что позволяет интенсифицировать последующий процесс ИК-сушки. Разработана инновационная технология производства пищевой добавки из выжимок тыквы, защищенная патентом РФ на изобретение и имеющая «ноу-хау». The article presents the results of studying the influence of treatments with electromagnetic fields of extremely low and super low frequency and the microbial pesticide Vitaplan containing bacteria Bacillus subtilis on the resistance of apples cv. Idared to microbial decay during storage, on the peroxidase activity change and the total polyphenolic content. It was found that the degree of damage to apples artificially infected with Aspergillus niger depends on the treatment parameters before storage. The highest degree of inhibition of the development of lesions caused by the phytopathogen was revealed in samples treated with SLF EMF with parameters 35 Hz, 12 mT and 30 min. It was also found that all the considered types of treatments increase the activity of peroxidase during storage during the first two weeks, as well as the content of polyphenolic substances. The data obtained suggest that the recorded increase in the resistance of apples to microbial decay may be the result of the induction of resistance under the influence of ELF/SLF electromagnetic fields and the microbial pesticide Vitaplan. The results of the study can be used to develop new methods for storing apples.
The studies devoted to application of physical methods for improvement of preservation of plant raw material, in particular: studies of the influence of extremely low/ultralow frequency electromagnetic fields (ELF/ULF EMF) at the stage of preparation for storage on resistance against bacteriological damage and market condition of strawberry are always important. It is established that natural microflora of the considered strawberries is presented by mesophilic aerobic and facultative anaerobic microorganisms (MAFAnM) and molds. The average amount of MAFAnM is 7.1×103CFU/g; the amount of molds is 288 CFU/g. Treatment by ELF EMF at 30 Hz, 10 A for 30 min decreases efficiently microbial contamination of strawberries. In addition to decrease in microbial population, this procedure provides maximum yield of standard products (72.6±2.7) after storage for 14 days at +(2±1)°C. Total losses are by 13.3% lower in comparison with the reference product. Organoleptic evaluation has confirmed the conclusion that preliminary treatment of strawberries by ELF EMF at 30 Hz, 10 A for 30 min provides better retention of organoleptic indicators. Herewith, the treatment by ULF EMF at 40 Hz, 5 A for 30 min increases total losses in comparison with reference product by 0.8% and impairs organoleptic indicators.
