Volatile compounds as 2-phenylethanol, guaiacol, 4-vinylanisole, 4-methylguaiacol, methyleugenol, 4-ethylguaiacol, eugenol, 4-ethylphenol, 4-vinylguaiacol identified in apple distillates (Genovese et al, 2004;Ledauphin et al, 2003;Ledauphin et al, 2004) can contribute to the observed fluorescence (Song et al, 2008;Zhan et al, 2008;Sádecká et al, 2015).
