ABSTRACT. This study aimed to evaluate the ripening of papaya fruit (Carica papaya L.) at room temperature (± 25°C) and 10°C with 80% relative humidity, coated with edible film based on sodium alginate (1%) and cellulose acetate film (3%) by dipping the fruit in the suspensions for 1 min. On the application of the treatment and every three days during 12 days of storage, fruit were evaluated for weight loss, firmness, total carotenoid content, lycopene content and vitamin C content of the pulp. The cellulose acetate film extended the shelf-life of papayas, without affecting their quality. This treatment delayed fruit ripening, whose changes in all the parameters analyzed were significantly slower than fruit treated with sodium alginate-based coating. The coating with cellulose acetate at 3% was more effective in the preservation of papaya stored for 12 days under both temperatures.Keywords: coating, ripening, storage.Uso de película à base de alginato de sódio e acetato de celulose na conservação pós-colheita de mamão RESUMO. Este estudo teve como objetivo avaliar o amadurecimento de mamão (Carica papaya L.) à temperatura ambiente (± 25°C) e a 10ºC, com 80% de umidade relativa, revestido com filme comestível à base de alginato de sódio (1%) e película de acetato de celulose (3%) por meio de imersão dos frutos nas suspensões durante 1 min. Na aplicação do tratamento e a cada três dias, durante 12 dias de armazenamento, os frutos foram avaliados quanto à perda de peso, firmeza, concentração total de carotenoides, licopeno e teor de vitamina C da polpa. O filme de acetato de celulose estendeu o prazo de validade do mamão, sem afetar a sua qualidade. Este tratamento retardou o amadurecimento dos frutos, cujas alterações em todos os parâmetros analisados foram significativamente mais lentas que os frutos tratados com revestimento à base de alginato de sódio. O revestimento com acetato de celulose a 3% foi mais eficaz na preservação do mamão armazenado por 12 dias sob as duas temperaturas.Palavras-chave: revestimento, amadurecimento, armazenamento.
A utilização de resíduos sólidos orgânicos, como cascas de mangas, na elaboração de farinhas é uma alternativa que contribui com a redução do impacto dos resíduos no meio ambiente. Além disso, reduz o desperdício, aproveitando todas as partes dos alimentos ricas em nutrientes. Esta pesquisa teve como objetivo analisar os efeitos das temperaturas de secagem na conservação de minerais das farinhas de cascas de mangas Tommy Atkins. As mangas foram oriundas do descarte da Central de Abastecimento de Aracaju. As cascas destas frutas foram desidratadas em secador de bandejas nas temperaturas de 60 o e 70 o C, trituradas e armazenadas até o início das análises. Calculou-se o rendimento das amostras nas duas temperaturas estudadas. Nas amostras in natura e desidratadas analisou-se os minerais (Ca, Mg, P, K, Fe e Na). As análises microbiológicas (Coliformes termotolerantes, Salmonellas sp., Bacillus cereus, bolores e leveduras) foram realizadas nas amostras desidratadas a 60º e 70 o C. A farinha de casca de manga obtida por desidratação a 60 o C obteve uma melhor conservação de cálcio, magnésio, fósforo e potássio, além de favorecer um menor consumo de energia quando comparada a farinha de casca de manga obtida por desidratação a 70 o C. Não houve contaminação em nenhuma amostra desidratada nas duas temperaturas analisadas.
Innovation has been pointed out as one of the main tools for the countries' economic development facing globalization. For economic growth to happen in an egalitarian way, it is necessary to strengthen, expand, consolidate and integrate a country's research and innovation capacities, that is, strengthening its National Science, Technology and Innovation System. In this system, it is primordial that t there is a close relationship between research institutes, ST & I developers, and companies, especially small and medium-sized enterprises (SMEs), considered to be key players in the socio-economic development of countries. Brazil already presents initiatives that seek to strengthen relations and encourage the development of technology among these actors. This article aims to discuss the relationships between the CT & I sector and its relations with SMEs, especially in Brazil, so that together they allow the development of the economy. For this, a brief literature review was carried out, which was structured in: Relation between ST&I and the national development, where will be treated some countries experience and where brazilian hystorical process will be shown; The importance of SMEs for a country economic growth, where the relations between ST&I and SME will be treated and also its indicators. Despite the innovation power for the development of the countries economies is in constant discussion, it is still a need for discussion between companies and SMEs as a fundamental relation for the growth of companies and consequently for the socio-economic growth, since as SMEs are today driving forces for development. For the central dialogue current in Brazil, the proceedings of these countries between ST & I and companies are required.
International institutions that promote economic development have pointed out, in recent years, that the small and medium-sized enterprises’ (SMEs) development enables the economic growth of countries and regions, providing a greater economy dynamism and improving its indicators, such as the Gross Domestic Product (GDP). SMEs also show greater diversity in the labor market and thus are also responsible for many of the innovation generated by the countries. For these companies to grow, it is essential that they develop strategic management of their innovations, including all the risks, possibilities and all actors involved in the process. Pharmaceutical industry is part of a high risk sector, because it needs a high investment in research and development of specific diseases treatments without the guaranteed success and therefore, they need a management model that deals with all its specificity, thus this the hypothesis considered in this work. A theoretical grounding was made based on an exploratory and bibliographical research on scientific basis. In this way, it was possible to analyze how happens the innovation process in SMEs and in the pharmaceutical sector and to suggest future studies that will allow a better management of these companies.
