Diverse factors can influence consumers' purchase intention leading them to change their consumption habits. The COVID-19 disease has influenced the population's behavior patterns, lifestyle changes, and food consumption impacting the restaurant sector. This research is a non-experimental, cross-sectional with a quantitative approach. The correlational scope proved the association and variability referring to the consumption habits of diners in Cancun, Quintana Roo, showing the changes that defined this population before and during the pandemic. Significant variations showed up: the average group size for eating out during labor days leads to an estimate of a decrease of 44.1% in weekly income for restaurants derived from group behaviors. In their habits with friends and family, this same variable decreased by 56%.
Performance measurement systems have proven to be a useful management tool to achieve the objectives and strategic goals established by the stakeholders of an organization; the evolution in these systems' theoretical foundations has allowed the designing models to focus on the size and specific business of each company. The life cycles of a performance measurement system and the Balanced Scorecard models, Performance Prism, and Kanji’s Business Excellence Measurement System were considered to establish the methodology. This research had a qualitative approach, using the collective case study's approximation with eight restaurants of the Hard Rock Café brand franchise in Mexico. The result obtained was a performance measurement system integrated with 17 indicators (results and performance) to evaluate the existing variation between the goals established in the strategy against the results obtained in the gross profit through the execution of the activities carried out in the sales process.
Las playas son por si solas son uno de los atractivos más importantes de México, espacio de actividad económica que coadyuva al crecimiento económico de los destinos turísticos donde se ubican y que es pertinente investigar para conocer el origen, establecimiento y futuro de las actividades que suceden en ellas. El objetivo de la investigación Clasificar y comparar las actividades comerciales de los destinos de Cancún, y Nuevo Vallarta, destinos en igualdad de etapa respecto a la teoría propuesta por Butler del ciclo de vida de los destinos turísticos. La metodología es cuantitativa en un estudio de caso que permite contabilizar y proyectar los resultados. La investigación concluye demostrando las semejanzas y diferencias de las actividades comerciales que son desarrolladas en los destinos turísticos seleccionados con la intensión de proporcionar información para la futura toma de decisiones respecto a la consolidación y/o diversificación de productos o servicios que son ofrecidos y demandados por turistas y visitantes en las playas de los destinos turísticos en México.
