Wheat Bread producers are required to produce quality products and are liked by consumers. Increasing the quality of bread will certainly have an impact on sales to be generated. One of the efforts in improving the quality is by doing Hedonic test and Hedonic Quality test. This study aims to develop a system capable of providing an assessment of new products to be released on the market. Hedonic quality is used as a variable for assessing bread products with 4 variables, which include flavor, taste, appearance, and texture. While the hedonic test using six classes is very very like, very like, like, rather like, and do not like, then this result will be used as a class of Knowledge Based (KB). This research uses Radial Basis Function Network (RBFN) algorithm, yielding 98,8% accuracy with 10 fold testing technique. The final goal of the development of this system will create a system capable of providing an assessment of a wheat bread product.
Phytosterol-rich fraction (PRF) obtained from palm fatty acid distillate (PFAD) was investigated for its effect on blood serum lipid profile of dyslipidemia rats. Dyslipidemia was induced by force feeding cholesterol to five groups of rats; one group was a control or normal group. Cholesterol force-fed groups were treated with 0, 10, 20, 30, and 40 mg PRF/kg/day for 4 weeks. All groups of rats were fed standard diet. A normal group was fed standard diet without PRF treatment and cholesterol force feeding. Lipid profile was measured every week (0, 1, 2, 3, and 4). Four-week treatment resulted in significant blood serum lipid profile improvement. PRF improved blood serum lipid profile by decreasing total cholesterol, triglyceride, and low density lipoprotein (LDL) cholesterol level and increasing high density lipoprotein (HDL) cholesterol level. The doses of PRF significantly affected blood serum lipid profile as well as duration of PRF treatment. PRF inhibited cholesterol absorption, which delayed blood serum total cholesterol rise. Cholesterol absorption inhibition was also indicated by higher fecal cholesterol concentration after PRF feeding. These results indicate the beneficial effect of PRF in the treatment of dyslipidemia.
A study on the effect of sodium metabisulfite and drying time on the quality of coconut sugar has been conducted. The objectives of this research were to determinate the effect of metabisulfite dan drying time to obtain optimum characteristic of coconut sugar. The research method includes the preparation of tapping coconut sap, processing crystal, and drying using modified oven method. The study used a randomized block design of two factors. The first factor is addition of sodium metabisulfite in several concentration (0,1%, 0,2%, 0,3%) and the second factor is drying time (air drying, 15 minutes, 30 minutes) in 3 repetitions. Parameteres being analyzed were moisture, ash content, reduced sugar content, and yield. Sensory analysis measured color, taste, aroma, texture. The best results are addition of sodium metabisulfite 0,2% and drying time in 15 minutes. The best treatment showed that the contains 2,41% moisture, 1, 77% total ash, 3,34% sugar reduction, yield 82%. Sensory analysis showed that had likely score for color, taste, and aroma. Stunting is a condition when toddler have less height compared to age, caused by poor nutrition. Probolinggo is one of area which produces moringa leaves, one of good local food ingredients for supplementary food, could be modified with chicken nugget. The research aimed to compare nutrient levels in chicken nugget as supplementary foods which modified with and without moringa leaves. Data were collected by proximate test in August 2020. The results showed nutrient levels of chicken nugget without moringa leaves had 19.2% crude protein, 2.8% crude fat, and 1.7% crude fiber. Meanwhile, nutrient levels of chicken nugget with 50 g moringa leaves (20% of chicken meat) had 18.4% crude protein, 2.8% crude fat, and 3.4% crude fiber. Based on result, it could be concluded that there is no significant difference of nutrition levels (crude protein and crude fat) between two samples, but the chicken nugget with moringa leaves has higher crude fiber than chicken nugget without moringa leaves. Thus, the chicken nugget with moringa leaves could be used as supplementary food for toddler with high crude protein and crude fiber.

Tim juga membekali para petani dengan penerapan sistem GAP dan GHP pada budidaya tanaman kentang, pembuatan diversifikasi produk kentang menjadi keripik dan donat sebagai oleh-oleh khas, pembangunan sistem informasi dan pemasaran produk serta penguatan kelembagaan petani pada khususnya petani kentang agar terjadi peningkatan kinerja kelompok guna meningkatkan posisi tawar petani. Luaran kegiatan ini yaitu peningkatan sumber daya petani terkait budidaya pertanian; peningkatan pengetahuan petani terkait perbenihan kentang dan terbentuknya rumah perbenihan kentang; tersedianya benih kentang yang setiap waktu sesuai kebutuhan petani dengan total 5% benih yang digunakan sudah hasil produksi kelompok tani; petani menerapkan GAP dan GHP dan terjadi 5% peningkatan produksi yang baik; terdapatnya 5 diversifikasi produk olahan kentang.
